The Origins Of Kopi Luwak Coffee

The story of Kopi Luwak coffee started in the 1700s after the Dutch first established coffee plantations in Java and Sumatra. It was then that the locals saw those wild animals would eat the ripe cherries and leave the coffee beans behind.

Since they weren’t allowed to harvest coffee beans, they started making coffee from the discarded beans.

These beans are seeds that have a sort of protection against animals – the caffeine. But, the civet cat is immune to caffeine.

These Indonesia cat-like small animals often eat ripe coffee cherries. Therefore, they harvest the coffee beans when ripe which helps produce good quality coffees. The civet cat is locally called the Luwak.

There are good reasons why Luwak coffee tastes better. One the Civet cats are selective when it comes to their bean choices and only eat the ripe coffee cherries that are ready for harvest.

On the other hand plantation workers back then weren’t as selective so they would often harvest coffee before it reaches its prime.

Secondly, those beans that had passed through the civet cat digestive tract have undergone thorough, ‘washing’. That means the enzymes and fruit pulp left on the beans from the cherries have been stripped clean during digestion. And this leaves an extremely clean coffee bean with fairly low acidity.
