To roast coffee, you need, in fact, to transfer thermal energy to it. This can be done in three ways: by conduction, convection and radiation.

Conduction works by touching a hot object. For example, if you touch the iron, you feel its temperature due to conduction. Conduction is triggered when the grains touch the hot drum inside the roster. This makes coffee taste extra thick and sweet. However, too high level of conduction can damage the grain and spoil the taste.

Convection transfers heat energy through a stream of hot air. An example of convection is a hairdryer. In the roster, convection is powered by a burner that delivers hot air. This is a mild and efficient way to transfer energy, through which we get a clean, bright and acidic cup. However, it often lacks body density, and too strong convection will dry out the grain.

Radiation transmits energy without air and contact with the object. For example, when you bring your hand to the battery and feel the heat – this is the radiation. In this case, there is no conduction because you do not touch the battery, and there is no convection because the air does not move.

In the roster, the radiation of heat comes from the heated metal of the roster. This is the most penetrating and gentle type of energy transfer, but it cannot be controlled. Since manageability is one of the most important factors in high-quality roasting, roaster manufacturers are trying to reduce the level of radiation.

Almost in any roaster coffee is roasted due to all three types of energy transfer. But their proportions and the final taste of coffee vary depending on the type of roaster.


There are four main types of roasters for roasting coffee:


Drum roasters are the most popular roasters in industrial roasting. Due to the stability of roasting and the transparency of the processes, such roasters allow you to get a balanced and sweet taste of coffee.

Initially, they were arranged simply: the coffee rotated in a horizontally mounted drum, under which there were burners with a flame, and the smoke was exhausted by fans or a natural draft. In such roasters, coffee was roasted mainly due to conduction.

Now the design of the drum rosters is somewhat complicated. Now coffee in equal proportions is affected by conduction, convection and a small part of the radiation.

On many simpler drum-type roasters, the proportions of the energies are closer to conduction and radiation.

Convection roasters are a relatively new type of roasters, in which coffee is roasted solely by a stream of hot air.

The advantage of convection home coffee roasters is that their inertness is minimal and their roasting is faster and without visible defects. However, the disadvantages are still more. For example, with visible controllability, it is extremely difficult to achieve stability of taste, the taste itself is often not quite balanced, and frying a large amount of coffee is inconvenient.


Mixed-type roasters are the most technically sophisticated, modern and expensive roasters.

Mixed roasters resemble drum home coffee roasters because they also have a drum. The difference is that this drum is fixed, and to evenly mix the coffee, only the blades inside rotate. Outside the roaster, a turbo burner is installed, which creates a stream of hot air for roasting coffee.

The ratio of types of energy transfer in such a roster is even more biased towards convection – 60–70%. At the same time, the advantages of drum roasters are preserved, but the disadvantages of convection rosters are not.

Coffee from such a roaster is clean, bright, balanced and sweet.

For personal use, you need to purchase miniature devices with a capacity of up to 300 g. Coffee owners can use products that can fry up to 2 kg of green beans in one working cycle.


Professionals who earn the art of roasting, performing solid orders, prefer universal units with a capacity of at least 2-3 kg.

If you plan to open your roasting business and the subsequent sale of perfectly roasted beans to different consistencies, then pay attention to the machines with a capacity of 50 kg and above.
